Thanks all for the input!
The Yamashin is on its way. I decided to avoid the Moritaka (for now) because I'm not as comfortable with sharpening Japanese knives as I hope to be very soon. Not sure i can do it justice just yet. It sounds like the white #1 will be more appropriate for me to "mess" with. I'm excited to be adding this one to my fledgling knife posse.
