Tanaka and the Edge Pro.

I recently (10.25.2012) bought a Tanaka Gyuto 210mm Iron Wood at your shop.
I also own a Edge Pro sharpener.
I've seen that you offer a lot of Edge Pro accessories and stones.

Can you help me?
What are the bevels/angles of the Tanaka R2 knive?
If there are different bevels on each side, shoul'd I change it to equal on each side?
What stones do you recommend for this knive?

Hi Boris,

You got yourself a fine knife. To find the Edge that Shigeki put on your knife just paint the edge with a sharpie and then adjust the angle to remove that mark. You don't have to get it perfect since the stones on the Edge Pro will grind a new edge if you're off just a little. I like to sharpen my edges evenly since it's easier. It's up to you how you do it. Don't worry. You won't ruin the knife if you change the bevel.
