Blacksmiths usually only do part of the work on the knives. They handle the forging and hammering. The rest of the process is done by others but this depends on the size of the shop. Very few knife makers in Japan work alone. It's not efficient. Most blacksmiths sell their knives to multiple small distributors under various names with some notable exceptions like Moritaka and Takeda. I'm hoping to visit this smith next year and I'll know way more about his process when I do this.
