Ken - nice job, and thanks for posting the vid. I found that I had to do the same thinning with the two Takedas that I own. I used a Shapton Pro 320, then finishing with Choseras !K, 2k, 4K, balsa with .25CBN. The improvement was considerable, especially on foods like carrots, apples, etc. Now I've got to get some fresh ginger to try your slicing demo!
