Great thanks so much. I'm actually eyeing a couple knives right now, the large takeda sasanoha and the Richmond ultimatum gyuto in 270 mm, have you had any feedback on these knives?

The Richmond HD Ultimatum was made for me by Konosuke and it's a really nice knife with excellent fit and finish. It's BIG so make sure you are ok with that. Otherwise it came out great and would be an excellent knife for a pro that likes a big gyuto.
Takeda does excellent knives and he runs a great backsmith shop in Nimii Japan. At one time there were over 20 similar shops working in this area and they mainly forged hatchets and other cutting tools for the forestry industry (the town is surrounded by mountains and trees). All of them are gone now except Shosui and one other maker and he was able to switch production to kitchen knives mostly, and made the transition by traveling all over the world to sell his knives at department stores and knife shows. His knives use aogami super steel and the heat treatment of his knives is excellent. I like them a lot.

I'd have to have some other desired attributes to pick between the two.
HD Ultimatum is a great, great knife. Real good, nearly stainless steel. Easy to sharpen, thin, great F&F, and a nice profile.
The Takeda is very thin at the edge, has that rustic feel/look, has a great steel with a good HT, good F&F.
Two entirely different knives, but both equally amazing in their own right.
