That character in Kanji means "middle"

Ahhhh, so that means "aogami super in the middle"? Or clad?

Yup, it means 'middle' and is often pronounced 'naka' or 'chu' (though I don't know which here).
Is your knife a 240cm? I'm guessing that's why it's there - 210, 240 and 270 are probably gyuto sizes S, M and L for Takeda.

I think I can find closed items ,but maybe very few.

I need to resurrect this one since I just scooped up my first Takeda, can someone explain the meaning of the five different Kanji/symbols above the "AS"? Thanks!

"新見" = Niimi (The city they're located since 1951)
"松水" = Shosui (Takeda's first name)
The middle one is self explanatory
