Does anyone know what the bevel is on the Takayuki Grand Chef Wa-gyutos? I'm lefty so I'm concerned about asymetry.
On a similar note, I know places like Korin offer left hand conversions (I have never sharpened before so I wouldn't want to try on my own)... are there any downsides to converting?

Probably a little late, but mine feels asymmetric, not quite sure on the exact specs but if I had to guess i'd say 60/40

Yes it's common that they grind them a little more on the right side. That said it shouldn't bother you and the first time you sharpen it you can even it out if you like them 50/50. The blade grind is even on both sides so it's not like the knife is flat on the left side.

Ok, thanks. I just wanted to make sure that the knife wouldn't "steer" funny if I changed the bevel to 50/50.
