I realized I wanted to ask something else in the OP, but forgot. Since I'm more of a rocking the knife type of person, will the Fujiwara be a good option for me and should I go for a 210mm or stick with the 240? Or is there something else in the price range, like a Santoku or something that would fit me better?
None of these knives will have that classic German profile, they're more akin to a French profile. A 240mm gyuto will work rocking, at least it does for me when I do so. I guess it kind of depends on how much belly you like.
