Suisin Inox versus Konosuke HD

I'm looking for the 240 mm gyuoto. I know they've got different steel, but are they otherwise different? I read the Suisin has better fit and finish, but where does this show? Is there anything that justifies the higher price of the Suisin?

The main difference is the Suisin uses 19c27 which is the same steel I used on my ultimatum. The Kono HD is really nice and the steel is just as good but different. It's semi stainless, a little easier to sharpen and fit and finish are very comperable. Little more polish on the suisin and a tiny bit more rounding on the choil and spine.

I usually recommend the Kono. For the price it's a better value.

Are the blade profiles the same? I.e. same thickness at the spine, same thickness just above the edge and the same tapering towards the tip?

I ask this because I am really looking for the "ultimate" laser.

If the Suisin Inox Honyaki Sujihiki I got to test is any indication to how the gyutos are ground, then I'd say the Suisins are likely a touch thinner than the Konos.. Really really thin.

Yeah, the Suisin's are thinner by a touch.....and I don't think they're the same profile, but I'd have to have both hear to overlay to verify.
