I am very seriously considering buying a 210 Suisin Inox Gyuto. However, I have a few quick questions.
1. In terms of blade thinness, how does it stack up against an artifex? Is it closer to a laser?
2. It looks to have a slight curvature to the blade which might facilitate rocking the knife if I had to mince something. Is this true?
Also, please feel free to list any pros or cons.

It's thinner than the Artifex, but it's not a laser.
I've not seen that particular knife in a long time, so I can't comment for sure. But, from what I recall of the line, it's a fairly standard gyuto edge profile. Not a lot of belly ala a German, not super flat either.

They're good knives. I like them but the steel is a little soft. Kind of reminds me of the Fujiwaras with slightly better handles and finishing. The Artifex has better steel but it's a little thicker. The Tojiro DP should be considered too in this general price range.
