Sugimoto Wa-Gyuto 210 mmm ?

Thu Sep 13, 2012 1:40 pm

I'm looking for a budget (and I mean budget $125 or under, the lower the better) gyuto with a wa-handle. I was looking at the Tojiro ITK but I'm concerned about the D-handle because I'm left handed. The Sugimoto 210 mm seems promising in theory, but the review scares me. On the other hand, the review on the 270 is pretty good but that first review still has me scared. I don't have the money for stones yet, so I need something that is useable out of the box.

Any thoughts?

There is a huge price difference between the 210, 240 and 270mm Sugimoto wa handled gyuto's for some reason. It is known that many Japanese knives do not come with a polished fully sharpened edge, so that is normal. The handles on lower end knives can use some TLC with sandpaper to smooth them out. Again, this is often the case especially with less expensive knives.

I would see if Mark can pop the handle off and flip it around or exchange it for an oval one for you. Some D shaped handles can be brought to an oval shape with files and sandpaper pretty easily. If Mark doesn't have extra plain oval handles, I probably have a few kicking around my shop I can send out.

The ITK I had tended to wedge a bit, maybe try the DP Wa Gyuto or the Sugimoto instead?

Thanks for the advice. Having taken a look at the Sugimoto and seen that I don't like the blade's profile (rises too sharply) and having talked to Mark I think I'll just go for the DP Wa Gyuto and do a little sanding on the handle if necessary.
