Came across this old photo. I think it's an interesting comparison of profiles of some of the best performing knives I've used.
Top to bottom:
Bob Kramer, Salty's pattern. Which he now calls "Euro Style". I knew sooner or later he'd adopt that profile somehow.

Do you have a favorite shape, or one that you grab before the other two? Reasons?

They're similar with subtle differences. I prefer the Masamoto. I like a narrower gyuto and it has a true flat spot extending from the heel and another small one near the tip. The Kramer is essentially a beefed up Masamoto.

The Masamoto Honyaki truly outshines them all......just my humble opinion.......!!!
