 Post subject: Stuck between Masakage or a Moritaka Nakiri

I am left hand and looking for a Nakiri. I preferably want one no longer than 165mm and i love the carbon steel one's. I want to learn to sharpen my own knives. I just don't know which one is better. I like the Masakage Yuki and Mizu nakiris.

Learning to sharpen is as important as selecting the knives. I just got into sharpening and should have done it much sooner. It will take some time to get good at sharpening, but should pay you back infinitely.

Don't waste too much time worrying about which stones to get. There is a whole section of the forum dedicated to sharpening. Spend some time there and watch some videos. Most will suggest you start with a 1k stone and go from there. It is much more about the technique. Check out some videos on youtube also. I really like Murray Carter's videos. He has a very simple approach. There isn't really a correct method, so you just do what feels right.

Opinions on sharpening is the same as knives :) Good luck. And the people here are extremely helpful, so don't hesitate to ask more.

well if you dont know how to sharpen I would recommend you to go to the chefknivetogo store and there are tutorial on knife shapening, and there also have a sharpen set for a nice price; I am thinking on getting them myself even tho I am using my bob kramer set

I prefer Blue over white steels and I like the Mizu KU, so I would vote for the Mizu. Bester 1200 or Nubatama 1K Ume Medium and Rika 5K stone and you will be set!
