Is stropping with leather or some other material necessary? I finish my sharpening is a 5000 grit stone and I am able to achieve a very sharp edge. Will I notice a difference ending my sharpening routine by stropping on leather or some other material? If so, how much of a difference will I notice?

No, it's not necessary.

Yes, you will notice a difference......it could be bad or good difference depending on your skill, your expectations, your medium, etc.

Most find an improvement when stropping on leather.....which I can't disagree with. But, I don't use a strop normally.
