I currently have a Bester 500, Beston 1200, and Rika 5k. Should I get a strop set next to continue building my arsenal or another stone around 8k?

A strop with 2 micron CBN is the equivalent of an 8k stone or a 1.5 micron CBN strop is the equivalent of a 12k stone, so you can have it both ways.

Good strop set up: http://www.chefknivestogo.com/stsetwiunhob.html

Good paste for the Balsa, it's usually not out of stock for long: http://www.chefknivestogo.com/bocapa1mi.html

I like to finish with a bare horse hide or Roo strop. I feel it makes you better with your stones because you must learn to eliminate more of the burr before stropping.

I'll also suggest getting a strop set before another stone, but will recommend a different set than Jeff, http://www.chefknivestogo.com/haamstkit.html.

I purchased the above set after similar deliberations, but my concern wasn't about adding another high grit stone, but more for maintenance purposes. I've had the strop set at home for over a month now and have not even considered getting the stones out.
