We have a massive amount of Edge Pro products so we figured it would be good to have a whole section on how to use the machine and what to use on it.

I'm new to knife sharpening and recently purchased the edge pro with shapton stones. I noticed that the edge stones are thinner than the shapton stones. The knives I'm sharping have a 10 degree edge so I set the device to that angle, but I think the angle changes when I switch between the two brands. Does that sound correct to you? If so, I need to pick up the aggressive grits in the shapton stones. Please let me know what you think.

Yes different thickness stones needs to be accounted for since it slightly changes the angle. This is what most of my customers use to deal with it. For a newcomer to sharpening you made an astute observation. Common sense like that will serve you well.
I suggest you consider the Angle Cube. (For as many times as I have said that I should be getting a taste of the action.)

I consider the angle cube and drill stop collar essential gear for the EP for all but the most casual user. Having noticed the difference, you have progressed beyond the casual user
All of your stones will wear at different rates, so eventually all of your stones will be of different thicknesses.
