I'm ordering a new knife soon, most likely a Hiromoto 240mm, and if you wouldn't mind helping I have a few questions about which stones I should be pairing with it.
I work in a kitchen so the knife will be used every day. I plan on sharpening as often as I have to in order to keep a razor edge. What kind of grit should I be looking at and can you recommend any specific stones? I would like to start with 2 stones for right now and maybe pick up another in the future.

Try the Shapton Pro stones. This would be a nice set of stones for your new knife.

The hiromoto is easy to sharpen. I like the shapton pros because they're pretty easy to transport, they are splash and go stones and they come with plastic boxes that can be used as holders if you're doing your knives at work. They also cut hiromotos quickly and very well.
