I bought my first knives last year and have been sharpening them on a combination 1000/5000 waterstone I got at Woodcraft for $30 years ago. I have no idea what the make or quality is. I have a 2" by 6" combination diamond plate: 200, 300, 400, 600, which I'm guessing also did not cost much more than $30 when I bought it, that I use to flatten with. I added the American Strop Kit when I bought the knives, and made a sink bridge.

I am thinking better stones would make sharpening a bit easier and a better edge and am leaning towards the Mr Knife Fanatic set with the latte 400, the Green Brick of Joy and the Snow White 8000. The set is just under $200, but there are a couple of other options in this price range, including the Rikka 5000, Latte 400, Ume 1000 set, and the Shapton Pro 320, 1000, 5000.

I'd like to be able to sharpen my planes with the stones as well.

Any suggestions on which set?

Shapton Pro stones are popular with woodworkers because they are hard stones. Should work well for your knives and planes both.

As Jeff pointed out, the Shapton's are extremely popular with wood workers.....so I can't recommend away from that suggestion.

However, I will point out this set as it's what I use with the addition of the Superstone 10k. I primarily sharpen kitchen knives. However, I do successfully sharpen chisels and plane blades with this set and I prefer it over the Shapton stones. Please note, though, that stone preferences are quite personal and what I like, you might hate.

Why I prefer the stones I do over the Shapton's?!?!

Because I don't like the tactile feedback I get from the Shapton's. They are very hard stones and the stone's I've picked have much better feel to them. I sharpen as much because I enjoy it as I do enjoying the final product. These stone's help me enjoy it more than the Shapton's ever did.

I have Shapton Glass Stones in 320, 1k 2k 4k and 8k. I love them. I sharpen knives with them. I'm not a wood worker. So chisels and planes, I have no experience with. If you are wanting something simply for efficiency and effectiveness, I can recommend them. They are a splash and go stone, which means there is no presoaking. I agree with what Adam said about personal preference.
