Thanks to everyone for their feedback on my sharpening stone question. I am a "purist" with sharpening as I am a busy chef. I have always sharpened my German knives with an oil stone and done well, moving into Japanese knives a bit now and more than anything want a time effective way to sharpen and keep the knives up to snuff without excessive time being devoted. I am not concerned with keeping my knives perfect looking. I need them to be my workhorses, so I gather a 400-800 for general edge work and a 1000-1200 to finish up would work good for general sharpening needs. Thanks again!
