Stone Fixers

Thu Aug 16, 2012 9:38 pm

I am in the market for a lapping plate, and am curious to the differences between a few different products as the prices vary. Here are a few that I've been looking at:

http://www.chefknivestogo.com/dmtextracoarse.html
http://www.japanesknifeimports.com/sharpening-supplies/sharpening-accessories/diamond-flattening-plate.html

They all seem fairly similar on paper, I'm wondering what some of the differences in practical use are? Thanks in advance.

The DMT and Atoma plates can be used as stones to sharpen as well, the flattening plate can't. not sure if that's a big deal for you, but I like to be able to use my lapping plate as a stone as well.

The Atoma is a beast of a plate and removes metal and stone quickly without stiction. The DMT plate is excellent as well and was a long time favorite of mine until I used the Atoma.

This one is cheap for flattening and works well: http://www.chefknivestogo.com/140grdistflp.html

I use it all the time and it's one of our top 20 sellers in the entire store.

The DMT XXC is a better plate and so is the Atoma but for stone flattening I'm not very picky. Like Mike said, if you want to use the plate for reprofile work I would move up to a DMT or Atoma.
