Stainless set of knives for a gift

Mark,
I am a returning customer and am interested in buying a “starter set”
of knives for my daughter. I am looking for good stainless steel that
will keep a good edge. I would like knives that don’t have to be
“babied”. I am considering the following:

• F-687 Tojiro 270 mm ITK Bread Knife
• F-800 Tojiro 90 mm DP Paring Knife
• #102 Richmond Artifex w/ Custom Handle
• # 550 Global MinoSharp Plus 3 Sharpener

In your opinion, is this a good set?
Would you make any changes to the set?
Would you make any additions to the list?
Should I have them professionally sharpened?

Yes this would be a fine set. The knives you chose are all good ones.

In your opinion, is this a good set? Yes
Would you make any changes to the set? The hand sharpener is not as good as sharpening with stones but I know some people want convenience and this will do better than most of them.
Would you make any additions to the list? I usually recommend a chef knife/ gyuto, paring knife and bread knife as the 3 most important knives and you picked these. I think you're good.
Should I have them professionally sharpened? None of them need to be sharpened outside your home. You might want to consider an idahone ceramic rod instead of the hand held and stick with that.

Would you make any changes to the set? Not necessarily. Other knives I'd recommend are just different....not necessarily better.

Would you make any additions to the list? A ceramic honing rod like the Idahone Mark suggested.

Should I have them professionally sharpened? If you can't do so yourself, yes, periodically. Every six months, every year....something. The problem with knives and not grinding them (sharpening with stones) is that as you use them and hone them the edge inevitably gets thicker. The spine is let's say 3mm thick....the edge is .1mm thick and the knife is ground to a perfect "V"....let's assume the perfect "V" for the sake of argument. As the edge is worn away, you increase the edge thickness as you approach the spine. Grinding them....what we call thinning...is something that every knife needs to maintain it's initial cutting ability.

For the Artifex #102, I believe that is one of the ones that I finish sharpened, so that should be all set for a while edge wise :)

The ITK Bread Knife is a great knife. I haven't tried the 90mm DP yet, but it should work well. I prefer a longer petty since I don't do much in hand cutting with a petty.

3rd on the ceramic hone!
