Good info to pass on Melampus...I really appreciate it. I'm certain we get the real Caputo because it comes from a reputable Italian food distributor. I bought a bag from my boss because a customer wanted it and never picked it up.
Caputo flour is so amazing. It takes hydration like crazy...and it just seems to stay together so well. I used no conditioners in my dough. I also like using Central Milling All Purpose Organic flour. It's good AP flour...I guess I like the taste, it's clean, no bleach or chemical taste. But in a blind test I'm not so sure I'd know.
