I've got several knives from you, and currently I'm sharing some imanishi stones with my brother (also from you). I'd like to have my own set, but wanted something where I don't have to soak. I heard Chosera were one of the best, but the price is a bit high, compared to the Naniwa Super Stones, which I hear are nearly as good.
A difference I read is that the Naniwa SS is softer than the chosera. How does softness/hardness affect the sharpening? And exactly how soft/hard are we talking about? Perhaps you can give me some perspective compared to the imanishi I've been using?
I'm also thinking of getting the 1k/5k/10k setup, will that be a good progression?

All of the shapton stones require no soaking. Same with the naturals.

You could add the 500 and the 8K to this set too but these 2 stones will do the job.
Also, as you mentioned the Naniwa superstone line is also splash and go. They are softer than some of the other stones we sell but they work well. I tend to like the higher grit superstones more than the lower grit ones.

The Naniwa Superstone are really soft. The 10k SS, which is my favorite finishing stone, is chalk soft. I've also used the 12k SS and it's not as soft....but I've never used the lower grits in the SS line.
I would try the Shaptons as Mark mentioned....probably the best set of Splash-n-Go stones around.
