Spend someone else's money on 2 good sets.

Here is something that might be fun for you guys. I have a good customer that wants a set for each daughter. The rules are under $1500 and all our items in the sets and all sourced from CKTG. He wants a good mix of styles and he wants the gyuto to be a great knife and he prefers damascus but it's not a deal breaker if they're are shiny or kurouchi. Carbon is also ok. He wanted a shun damascus bread knife but is open to others as well. Both his daughters are home cooks and let's assume they're both righties (I didn't ask yet). Ready set go.....

120mm Petty
210mm Gyuto
240mm Bread
170mm Santoku
240mm Suji

210mm Gyuto
240mm Bread
170mm Santoku
240mm Suji



Petty: Hiro
Gyuto: Either Kono or Tanaka Damascus, (re-handled) Since there cool with carbon
Bread: Tojiro
Santoku: Either Mortiaka or TKC
Suji: Can't go wrong with the Kono white #2.

Total: About $640. So about 1280 ish. All are good work knives and serve me well and well under 1500.

I agree!

120mm Petty: Hiromoto G3 or the AS clad would also be nice. or the Tanaka Sekiso 130mm.
210mm Gyuto: Tanaka Sekiso Gyuto
Bread KnifeL: Tojiro ITK
Santoku: Tanaka Sekiso or Moritaka or
Suji: Kikuichi Elite Carbon 240mm or Kono White #2

With the Tanaka Petty, Santoku and Gyuto and the Kikuichi Elite Carbon 240mm Suji and the ITK Bread Knife it's like $570 each and 3 of the knives would be matching damascus. Going up to the Kono suji would bring it to $630 or so each. Maybe add in the 5 piece sharpener or an Idahone for each?

2 Tojiro ITK Bread Knives
2 Richmond Laser Sujis
2 Sakai Takayuki Hammered Texture Santokus OR Suisin Inox 210 Gyuto (not both. Don't kid yourself)
8 Sheaths from Burke Cutlery (what? I wouldn't make them if I didn't think they were the best idea! If he does do this, I'll make him drawer racks, because I want to win :lol: ).

You'll have $22 to spare by my counting.

Ok, after using my Tanaka Sekiso gyuto a bit, I say go with as many of these blades as they can get!!! Effortless cutting, sharpest OOTB edge ever (it was sticking into my cutting board), glides through potatoes, carrots, onions etc cleanly and smoothly. Really blown away by how it performs!

That came out to about $2100 but I think it's a nice set with a good range of different damascus knives.
