Hey Mark, I'm looking for a wedding gift for a good friend of mine. He had been using some crappy Henckels for years but is a gourmet cook and appreciates fine things. I want to get him a chef's knife, something fairly special. I bought a Blazen from you a couple years ago and love that but want to get him something different, a little more unique. I want to spend $200-300 and was wondering what you'd recommend. I think he would be better off w/ a stainless vs. a high carbon but I think he wouldn't have a problem w/ a high carbon blade if that's what you'd recommend. The wedding is on 9/7 so it would have to be something you have in stock. As always thank you for your help Mark.

This knife has cool wedding gift for a good cook written all over it. The knife is hand made, stainless, in your price range and would be perfect for you. Comes in a nice box too with nice kanji writing on it.http://www.chefknivestogo.com/kagigy21.html

Stainless clad carbon.....still pretty easy to maintain:http://www.chefknivestogo.com/gokogyuto240mm.html
I think stainless clad KU knives like these leave a lasting impression. They've got that remnant of a hand made knife. It's a great knife to boot.
