Spalted Maple Gyuto

Mostly finished up (missing a stencil and a few small scratches) a 240mm western handled gyuto this weekend.

Handle is stabilized, spalted maple.

Edge sits right at 0.01" at the heel and and 0.008" near the tip.

That looks like the one you did for me Adam except with different wood scales. I love the profile of that knife. Used it this morning.

Did the knife have a bolster before you rehandled it? If so, did you reuse it?

I made the entire knife from a sheet of steel, a block of wood, some pins/bolts, and a piece of stainless steel for the bolster.

I don't do just rehandles. :)
