Well, god-damn... SEASON IS HERE!

90 hours in six days, and I have a VIP lunch party tomorrow that I have to pickup product for. I'm leaving work now, got to walk the dog, shower, get in a 3 hour nap... then off to the markets & back here to get the sorbets spinning pronto & the rest of the prep out the way.

Just concentrate on all the joy and happiness you bring to all those self-centered 1%ers that have no grasp on how hard you work!

Don't forget to inflate the souffle to 40 psi :)

Just buy a new knife. That'll make you feel better.

UMBERTO <> If the FOH could get their servers to drop the plates in time for said explosion, maybe there'd be some merit to your quip, but we'll give you points for participation. ;)

Buying knives brings me much less satisfaction than studying/analyzing them &/or spending time Moderating here. Things are insane in my kitchen right now. Time is even more precious a commodity than typically right now... :|

Keep your head down buddy. Remember me each time you walk into your freezer because that's how cold it will be up here for the next 4 months.
