Hi again friend!
I have a new query for you and I was looking for a new knife, small paring potatoes, vegetables, etc ...
If possible it was Super Aogami, or other material easy to sharpen because as I commented on the first purchase santoku sharpening stone is not used. Prefer to be as short as possible to make it more comfortable in my small hand.
Thank you very much! Jorge.

There are a few small petty knives that are made of AS steel. The Takeda is a nice one: http://www.chefknivestogo.com/tasmpe90as.html
This Masakage Mizu is a nice one and a lot less: http://www.chefknivestogo.com/mamipe12.html
If you're ok with blue #1, this Murata Buho is really nice too: http://www.chefknivestogo.com/mubusa12.html
