Looking for a sharpening system that's relatively easy to master giving a decent finish for a home cook. Another plus would if I could use it one handed?

The Edge pro is the best sharpener if you don't want to use stones. It's pretty easy and this set would be good for you:http://www.chefknivestogo.com/edproesset.html
If you want something simple perhaps the minosharp would be another way to go. It's not as good but it's easier, cheaper and will get your knives pretty sharp. It's better than most of the other cheap sharpeners we offer.http://www.chefknivestogo.com/glmipl3sh.html

If you're at all serious about getting sharp knives, the EdgePro is the only sharpening "system" I've ever seen that actually works.
Now, there are a few I've not tried....but there are a bunch I have that are pure garbage.

Unless you only have one hand, freehanding is actually a simple concept, especially if you aren't going for absolute perfection.
If you do have one hand, and want to sharpen your own knives, I'd get an Edge Pro.
If you are just a cook and need your knives sharp, get a honing rod and send them to a professional.

I couldn't use anything mentioned so far with only one hand very effectively. Why the need for one hand? Someone had to ask ...

Yes I was thinking the same thing. The Takeda stone would easily work as long as you clamped down the knife.
