I was also considering Shun knives when I found this forum.
I decided to go with something completely different and am very happy I did. I went with something reactive so it would not be appropriate for what your looking for but Adam Marr's recommendation of the TKC should be strongly considered.

The VG10 shun knives are really easy to chip. A friend bought the damascus VG10 super set for who knows how much money, and is totally pi$$ed at the quality of the edges. Fit and finish and aesthetics are very nice, but the edges are super brittle. And he knows how to use a knife (but not how to buy them! - couldn't resist a joke). I used his chef knife, and the profile was a no go for me (IMHO - but just that, only my opinion).
I, personally, would run from Shun display, do not pass go, do not collect $200, hop on the internet and start exploring.
