Hey Chris, how do you like the Tanaka Sekiso? I know Taz loves his, but it is always nice to hear other opinions.

I've had the Tanaka for about a year or so. I actually bought it after a couple of PM's back and forth with Taz. It was my only gyuto for a while and its always performed well. I've only 'had' to sharpen it once. I usually just strop on leather before use and its sticking in the cutting board :) I bought the Takeda at 210 hoping for a gapper between the 165ish of the Carter and the 240. As you can see, the Takeda is damn near 240! No complaints here though...I call it 'bonus length' :lol: The Tanaka cuts like a dream, very thin behind the edge and very little stiction. It is extremely reactive but hasn't been a real problem.

As for addiction knives...I plan on replacing that monster vintage Russell with a Anryu hammered suji once they're back in stock. I have almost zero need for a suji but for some reason keep going back the knife on CKTG :)

Hey Cedarhouse: The Tanaka Seisko gyutos are worthy of all the praise that Tim Johnson (Taz575) gives them. I first saw the the 240 that Tim has when I picked up a knife at his shop he was rehandling for me . Of course his Seisko has an awesome custom Tim Johnson handle on it! I ordered a 210 shortly afterward.The Seisko's are great performing mid weight blades. The 210 is a little taller than other 210s and it holds an edge very well. I just strop on either bare leather or on a 12k polishing stone after use to keep it sharp. Nice and thin behind the edge with a gradual tapering convexing grind to its spine. Cuts great and a good value for what you get . BB
