Oh that's neat! Would you mind telling us what kinds of meats those are? I love learning about new types of cured meat, especially ones containing PORK.

i love making sausages too.... too bad my country isn't very good for curing sausages.... hot and humid

I have a spare fridge I would love to use for the same purpose, also for dry aging meats. Are you doing anything to control the relative humidity?
