I have been testing my edges with printer paper and magazine paper. They cut through magazine paper very well. I recently tried paper towel as I read in another thread this was a good test. My edges don't cut paper towel well. Is this a valid test?
I do bester 500 when needed, beston 1.2k and rika 5k. No strop. The edges cut food well, no real complaints there

Yeah, it is. However, the true test of a knife's edge is how well it cuts what it's supposed to cut which you have no complaints about.

If you're simply after results, stick with what you're doing. If you're after some fun to see how sharp you can get a knife.....cut toilet paper!! :)
