I just found this on the torijo.net site, I picked up two Japanese knives (carbon) today from a chef and I was trying to find out where they were from and stumbled on the video.

It is easy to find on the site if the link doesn't work, teh movie shows a lot of freehand sharpening and the Japanese terms for Relief Angle and Micro Bevel.

Thanks Peter, I like those forcner style Tojiro's. i wonder where to get those?

Really mark, Depending on price points, I wonder if they would give Forschner knives a run for their money? Look cool, I'd like to see a catalog. Do they have anything online? How are they done all stainless?
