I am a newbie on your website, and looking for a set of sharpening stones for my knives, mainly chef knives(stainless, and carbon), and would like your advice on a good starting set. I am looking for something a little better than everyday use, not razor or polishing stone, do you think Imanishi 1K/6K combination is a good choice? When will it be back in stock? Can you recommend something you think will be a good value, and good fit for what I want?

I do think that combo stone is a good one to use when you're just starting.
If you want an alternative for about the same price you could get a Shapton Glass 2k. It will put a good edge on your knife and the stone is easy to learn on:http://www.chefknivestogo.com/shgl20gr.html
The advantage of the combo is you get 2 stones in 1.

How would you compare the Imanishi 1K/6K combination stone with King 800/6000 combination stone? When will the Imanishi 1K/6K stone be in stock again?
