CKTG,

I recently purchased three Tojiro knives from you guy, (love them by the way, will be buying more soon) however now I'm in the market for sharpening stones, can you recommend a couple of stones for these knives? I was looking at either the Shapton Glass/Pro or Chosera ranges and possibly a few different grits.

Regards,

Josh

Hi Josh,

If you're just starting to sharpen this set will give you everything you need to get hair popping results:

If you just need a couple stones and you have the other stuff the Shapton Glass 1K-4K pair would work well for your knives: http://www.chefknivestogo.com/sh2pcstset.html

Mark,

Thank you for your recommendations. The 8pc kit looks like great value for money, apart from pre soak vs no soak is there much of a difference between this kit and the Shapton Glass kits, do they have similar cutting/polishing characteristics, and wear characteristics?

Regards,

Josh.

Yes they give very similar performance to the shapton glass stones. Lots of guys like them better.

JOSH <> I have all the stones in the 8pc, and I have a Shapton Pro 2k, 5k, 8k, 15k... not the glass. If you are talking about the Shapton 6 pc which has the 1k & 4k, I can't see it being a more versatile set than the 8pc. Concensus is the glass stones are super fast cutters w/high polish capability, but the Beston 500 is silly fast (be careful), the Bester 1200 is an awesome balance of cutting power & refinement, and the Rika 5k produces a nice mirror polish in uber enjoyable fashion. Sharpening on the Rika is truly luxurious... I love its mud.

Bear in mind, these sets are quite different. The ShaptonGS are really hard precise stones while the 8pc is a softer more forgiving set.

And some of the guys like them (Shapton Glass) less. It's very personal preference.

I prefer the stones in the 8 piece set (500 Beston, 1200 Bester, and Rika) more than the Shapton's.
