Hello Mark,

This is Tommy again. This time i have questions regarding sharpening stones. I have Naniwa super stones 400, 1000 and 3000 grid stone but i use 400 and 1000 the most. But there are 5k, 8k and 10k stones as well which i dont own just yet. My question is would sharpening on higher grid stones help with the edge retention factors or they have other reason to use higher grid stones? i also see on your site that you have chosera and they are harder stones comparing to super stone, can you give me some idea about chosera series please. Regarding stone flattening, can i use one flattening for all the stones i have, if i could, would it cut off to much on the finer stone? i heard that the diamond plate would leave some cut on the stones which would not be so good, do you have any suggestion?

The higher grit stones will polish the edge and make it last longer than a lower grit edge.

Choseras are a bit harder and cut faster than the superstones. It's not a huge difference.

I use a diamond stone and that is what most people use to flatten stones. Scratches in the stone will not transfer to your knife so it's not a problem.

Hello Mark,

Thank you for your reply. i get the idea of going really high grid stones now. I just sharpened my knives today, i do this job weekly and when i look at my stone, superstones 400, which i used the most, it's sort of wavy like you twist 2 ends of a paper to 2 different directions, it's kinda funny but i know now that i do need a proper flatten stone. should i use choseras? i dont really like the base of superstones though.

I dont mind at all Mark, i have been reading through the forum too.

This is the 4th email from me and i hope you dont find it annoying. i have been looking at stones and i have a question. How do you choose for yourself a good set of sharpening stones? i just came across glass stones and they look great too.

I'm the wrong guy to ask. I feel it's my job to try lots of different stones so I am constantly trying them in different combinations and then selling them off as used and working new ones.

The glass stones are really good stones. They cut better than most stones and are splash and go. Very conststant too and can be used straight out of the box without flattening although I do like to round the edges on them. http://www.chefknivestogo.com/shapton.html
