Sharpening my knife on a stone

hi mark,

i recently received my new knife and sharpening stone - can you send me a video link on how to sharpen it?

i purchased the moritaka gyuto 240mm and the imanishi two sided stone.

also - can i practice using the stone on some of my other chef knives just to practice? i have a chef choice and a german f. dick knife i can practice with. or will that ruin my stone?

i've always used one of those wand like sharpeners that i got with my knife kit 14 years ago when i was in culinary school, so i'm new to the whole stone method.

Hi Sue,

That combo stone will work great on your Moritaka. Watch some of my demo videos to get a feel for sharpening and then dive in. I would recommend you practice on a beater like you suggest just to get a little practice with the repetitive motion you need to get an edge. Then, come back and ask questions on this thread and we'll help you with more tips. Soak your stone for about 10 minutes and if it dries out as you sharpen just splash some more water on top and keep sharpening. Use a magic marker to paint the edge and then sharpen at an angle that removes the mark. This will instruct you on where the correct angle is to sharpen your knife for the first time. Later you can adjust the angle to whatever you like but at first you want to copy the existing edge to make life easier on you. Good luck!

I would practice on some old knives to get a feel for what your doing before trying the Moritaka.
