Hi. How do you sharpen the CCK Bone Chopper? Can it be sharpened on an Edge Pro? What kind of an edge would you want to put on it..sharp? not so sharp?

I don't believe you can sharpen it on an EdgePro. The EP can sharpen upto a 3.5" wide blade according to the specs....the CCK Bone Chopper is just shy of 4" (100mm is 3.94").
Otherwise, you'd want a very obtuse edge on it....something in the 25 degrees per side maybe. Depends on how you plan to use it really.

I also have a commercial Chef's Choice. Wonder if the CC is tough enough. Don't want to ruin a $500 machine. I believe the CC sharpens at 20*.

A giant NO on the Chef's choice. Way too thick. FWIW, I wouldn't use a CC for anything other than cheap house knives that are going to be abused cutting on aluminum trays and similar tasks.
The easiest way is on a belt grinder, maintaining a convex grind. Otherwise use a sharpening stone but expect to not put too acute of an edge on it. You can still make an obtuse angle sharp enough to slice paper, even not going to a very refined grit. A 1-2k edge is more than enough.
