looking at purchasing the goko white #1 gyuto. would a shapton 1k and then finishing with the 5k sharpening stone be a good place to start assuming i don't let the blade get too dull?

That is a very good starting point. Later you will want to add something to flatten your stones and a lower grit stone for repairs and thinning your knife.

Mid range/ finisher is all you need for a great edge on most kitchen knives. So then the question is why do I have 20 stones in my kitchen cabinets?

out of curiosity would i be able to just get away with using the 1000 grit?
speaking of flattening i gather that the 140 grit diamond stone flattening plate is good for use on any grit water stone. also is it recommended that i get a flattening plate that's larger than the water stone?

You could get away with a 1k stone, but you would be short changing yourself given the potential of the knife you baught.
If you are dead set on a single stone, perhaps something like a good 2k stone. The green brick perhaps.
If cost is the issue, the King combo stone, 800/6k sold on this site is low cost and will leave a seriously sharp edge.

The 140 grit diamond flattening plate is good for use on any grit water stone. It does not have to be bigger than your other stones but it is helpful if it as big.
+1 on the green brick for a single stone.

If there is a single stone and you are willing to touch up the edge before needing to be more aggressive, then I have to +1 on the Green Brick. Combo stones can also work well, but that Green Brick is just magic and fully effective for a practical edge. A flatting stone/plate is a must have.
Also, the green brick is big enough to clear the surface you are sharpening on. While I always use a holder, you could skip that since the stone is so big.
