Re: Sharpen with both hands or only left/right

Both hands, edge facing me/spine away at all times, usually keeping the blade angled at a good 35 - 45 deg to the stone. I've found this allows me to keep a more consistent visual picture of my angles. When I started, it was rewarding to watch over time the non-dominant hand bevels move closer in symmetry to my dominant hand bevels until they were indistinguishable; very satisfying.

I agree, however, that the most important factor is consistency so whatever posture/method that allows for that is superior for that individual. Once you develop that all important FEEL for the bevel contacting the stone and the resulting suction when you're dead on, consistency follows quickly.
