I bought the Shapton Glass stones and long side edges are higher than the middle area, because both sides are dark gray. It seems like the middle are doesn't make contact on some portions of the knife. What would cause this?

It's called dishing. You need to flatten the stone nearly every time you sharpen your knife.

I tried the sandpaper...seemed to work. Would your "140 Grit Diamond Stone Flattening Plate" work with the Shapton 1K and 4K?

Sandpaper works pretty well. It just wears out fast.

The diamond plate you mentioned is fine for flattening. It's not as good as the DMT or Atoma but it's cheap and it will work just fine: http://www.chefknivestogo.com/140grdistflp.html

Dave, I'll throw my 2 cents in since I originally tried the cheaper diamond plate, but I found that only the Atoma plate was truly DEAD flat (Apparently some of the DMT plates are as well). Plus the Atoma has a very consistent diamond pattern which works great for setting new bevels or thinning secondary edges, etc. Yes it does cost significantly more, but you just need to determine what's best for your own needs. -Josh
