I've searched this site for information on this topic but didn't find much. I'd like to hear people's thoughts on storing their knives in a wooden knife block. And for those that use wood blocks, any suggestions of blocks that work well for for Japanese knives would be helpful. Several of my knives (nakiri, santoku) are too wide to fit into the block I have (Wusthof block); most blocks have very limited slots for wide knives.

My comments are they typically have a bunch of slots that aren't useful to me and geared towards knife sets. If you have a kitchen drawer you can repurpose why not get an in-drawer wooden knife organizer?

I believe for most of us we use magnetic holders. Leaves knives out in the open to air dry along with a nice display.
This is the easiest way to store a variety of lengths and sizes.

I use an in-drawer wooden organizer - it works great. I also installed a child lock on the drawer to our grand sons won't get into it. I don't know about the length, but BB&B sells a Kapoosh knife block that has densely spaced plastic rods to accommodate a free style organization of your knives. They look pretty promising.

Those work in theory, but in use it's a different story. They end up looking like trash with a couple months use. I don't personally like it, but to each his own.

Yeah, I have heard the knife edges make little cuts in the plastic rods, which eventually means little bits of plastic on knives.
I use an in-drawer knife holder. I actually kind of like that it's out of sight. The cheaper knives are visible and more readily accessible in a block on the counter.
I'd like a magnetic wooden block, someday. It wouldn't work in my current kitchen, but it's a nice way to display nice knives.

Back in the day, David Smith made some knife blocks. I got one that hangs on the wall. It has 24 slots in it, each will hold any size knife upto 300mm and any knife width short of a cleaver. Two back slots hold cleavers.....which I do still have one.
OEM knife blocks are full of useless slots.

Thanks for the info guys. I don't have any hands experience w/those knife blocks. That makes sense, especially w/uber sharp knives.

I have one of the Shun ones from CKTG, but I don't see it on the site anymore? I have my Idahone in the steel slot, Tojiro ITK bread knife in the upper left, Tanaka Sekiso 240mm gyuto, Laser AS 240mm gyuto, Laser AS Nakiri, Sekiso Nakiri, Sekiso 150mm petty, Dojo 135mm petty, my 7" AEB-L Boning knife and my moms Hiromoto Santoku in the block. It stores the knives on their sides, but I noticed a few stray light scratches on the side of the knife resting on the wood. I need a few more blocks since I have several knives stored on top of the cabinet and another 2 boxes full of knives.

It would be sweet to be able to design a forum block for people with multiple longer knives.....if only there were someone with connections.......
