There is an awesome restaurant in SF called State Bird Provisions. They make this little pancakes filled with sauerkraut. They are delicious.
I have a recipe that is very similar.
1t Baking Powder
2c. drained sauerkraut
mix wet and dry till combined, Don't overmix
add sauerkraut, should look like pancake batter, not to thick
fry in hot pan with butter (2in in diameter is how big I make them.)
top them with ricotta or mascarpone and good amount of fresh cracked pepper.

I really don't like sauerkraut, but in this recipe, is the kraut there mainly for texture? What. "Kraut" flavor comes through? It sounds interesting enough to try.

My wife does not like sauerkraut either, and she loves these. I would say the flavor and texture do come through, but it is balanced well. The cheese adds some richness and the kraut adds some crunch and acid, and the pepper adds some heat and aroma. The pancake batter mellows out the potency of the kraut for sure. It's a good recipe and it is unique forsure.

I figured it mellowed it out. I know my wife would love these, and I think I might as well. Going to have to try it.

Yeah it's a really good restaurant. They earned their first michelin star this year, and this place is not fancy at all, which is usually the case with michelin stared places.

I make my own kraut with a gartopf pot. Easy and light years better than canned or jarred.
