I have never jumped on the Santoku band wagon and I am curious why people enjoy a Santoku over a Western Chef knive or a Japanese Gyuto? Are there better applications for a Santoku than the traditional Chef Knife or Gyuto?

I know my wife likes Santoku because they're light and lacking sharp tips, not as intimidating as long chef knives or gyutos.

I really think it's a women's thing. My sister and sister-in-law, that's all they use.
