How would you compared it to the AS Laser in terms of grind/cutting performance?

I'd have to say cutting performance of the 2 knives is very close, although I say the Sakai is a tad better, but not by much, and that statement is not based on thinness alone. Since I don't have an AS Laser right in front of me, I'm going to say that they are about the same thinness right behind the edge, but the convex on the Sakai was done perfectly smooth, like a custom blade.... nearly Kono Honyaki good. The grind really helps the knife slide through food, not that an AS Laser has any trouble at all... it's just that little bit extra. I really would like to call the Sakai a "premium" type item, where you are paying for perfection in F&F as well as performance whereas the AS Laser is more about the performance. So, yes, it's a little bit better, but not enough to justify the price based on performance alone, it's the attention to detail in the grind and finish wrapped together with the performance, and not many makers can pull that off as cleanly as they did in my opinion.

Did that make any sense at all? :)

I've already ordered my AS Laser, but I was looking at this knife as well. What I didn't realize was the knife in the video was the 500 USD one, as opposed to 180 USD variant I was looking at.

Have you used the cheaper variant? How would it compare do the AS Laser?
