Ok, now while I wait for the new batch of anything to come in I have a little bit of breathing room. I was initially going to wait for the kono HH then read about the m390 and shape of the ultimatum and also read some good things about the kanehiro ginsan. 3 different steels but in a practical sense what is the benefit. Also, 3 different profiles as well as price. 183, 200 and 250 respectively. Will a home cook see a difference? Thanks...Dave

I've been waiting and happened to get the email at lunch. I snagged one of the first ones, they should come with serial numbers :D

Really looking forward to comparing this knife with the 19C27 in terms of sharpening and edge retention. If it works out I'm thinking of a custom handle; but we'll wait to see how the balance with the stock handle turns out to be. Hurry up Mr. Mailman!

I'm still loving the Ultimatum profile; best overall guyto for me so far.

Well, hopefully the next batch will be a little quicker in coming out! Hopefully this means L&G has the manufacturing process figured out.

Hahahaha that damn Mark Richmond should give me a commission. I'm busy for a couple of hours and check my email and the m390 Ultimatums are gone! And this is the thanks I get when I offered to buy the entire first run for 10% above retail. It's a cold cold world.

The much anticipated M390 arrived in my mailbox today!

The original Ultimatum in 19C27 steel is on the left, the new M390 version on the right.

The M390 is a bit lighter than the original, 167g versus 204g
The M390 is a bit thinner than the original, approximately 2.5mm at the heel vs 2.8mm
Balance on the M390 is further forward then the original.
Mark has chosen a slightly narrower handle on the M390. I am used to the feel of the original and like the darker wood on the original.
Sharpness was pretty good, although I have my original sharpened up better. I will need to see how the M390 sharpens up.
The tip on my M390 arrived every slightly bent to the left when looking down the spine. I'm not sure how I could fix it; the metal is quite thin and I'd probably only snap it off if I tried. I'm not sure this has any practical impact, but I notice these things and it's the only thing that really bothers me about the knife.

Next we'll see how it stands up to sharpening and use.

If it arrived bent the solution is simple, exchange it for a non bent one. It would be unacceptable for you to be sold a $250 knife with a bent tip.

Actually, it would be unacceptable to pay $5 for a knife with a bent tip. Return it. And I appreciate you posting the photo. I'm not sure why the handle is smaller than the original. That would explain part of the balance issue. Personally, I prefer larger handles; this is the first attempt of Richmond Knives at using this new steel, and Mark has made changes and improvements in his other knives based on input from customers. So I hope people do post comments when they get their knives.

I'm glad you agree that Richmond Knives and Chef Knives to Go will honor their products. That was the point of my post. I do hope people feel free to post trueful feedback about their knives. I have found posts on this forum to be quite valuable, including the post above mine from another subscriber that recommends returning the knife.

I was waiting on one to be delivered yesterday for a new handle, but USPS has a different delivery date in mind I guess.
