Shaun,

Now I know where the "line" came from . . . . that's not a knife . . . . THIS IS A KNIFE ! The Ultimatum has a great shape . . . the longer and taller version with great HD steel . . . really a fine and good choice for those who like this shape but prefer the "super sized version" due to personal preferences . . . for work, certain food preparation, or they might be larger including hand size.

2 onion dice was a nice surprise . . . .

This looks like a great value as compared to some of the other HD steel gyutos - especially because its really a - 285 mm

Thank you for doing this video it helped to see this knife in action !

She's a big scary blade. It's so light and nimble, I'm actually a little intimidated by it. 270's as long as I go! lol :D

Just reviewed a Masakage 270 gyuto, good comparison to do them back to back in a way. Both knives are ridiculously good.

My Kono 270HD Funayuki is 276mm, and the first thing I said to myself is, "damn... the Honyaki Suisin 270 I'm used to is 260 on the edge, & this extra 16mm make this thing feels like a sword!"

Another cm, I reckon feels like a mile...

I just got one of these in today :) Wow, awesome blade! I have a 330mm Tojiro DP gyuto from several years ago, maybe before the VG-10 and it was used for watermelons and breaking down deer roasts, but that was it since it was so big and bulky. The Kono is much lighter and more nimble feeling. I normally use a 240mm, so I wasn't sure how a 4.5cm difference was going to feel. Honestly, I don't notice it all that much in playing with it. I will cut up stuff tomorrow with it and see how it feels on the board. Blade is stupid thin, prob as thin (or maybe thinner???) than my Richmond Laser AS and Tanaka's, on par with my 300mm Kono White #2 suji! Looking forward to using this, now I gotta figure out what I want to rehandle it with!!
