I also prefer my gyutos slightly shorter and a lot stiffer. Somewhere around 50mm or so for 240s, but this knife that made me think twice. Unveiling it from the box upon receiving it didn't quite give me the same initial excitement of say, the Masakages.


As soon as I started using it, WOW, it grew on me immediately. Although it was tall, the weight, profile, balance, and the way it felt in my grip, made it very comfortable to use from the get-go. Initial sharpness and thinness of the blade was superb. My only small gripe would be the slight flex of the blade. Yes, a solid performer it is and easy to love...
