Richmond or Tojiro Nakiri?

Tojiro DP Nakiri or the Richmond Artifex Nakiri

Both about the same price...can you comment about the two? I know the Richmond is your brand but please be honest. Steel, feel, build quality, etc. Thank you in advance.

Tojiro DP Nakiri will be a little heavier due to the bolster, have VG-10 steel in the center as the cutting edge, and decent handle F&F. Blade finish will be a little nicer on the Tojiro and it will be thinner behind the edge. The Artifex Nakiri maybe a little lighter, but it has G10 handle scales, which are somewhat heavy. Handle F&F may go to the Artifex slightly. No metal bolster and AEB-L steel (mono steel vs the clad blade of the Tojiro), but the finish isn't as nice as the Tojiro and it is thicker behind the edge. The Tojiro will cut slightly better, but the steel isn't as nice to work with as the AEB-L is in terms of sharpening. Thinning out the area behind the edge on the Artifex will make it perform VERY well, and will probably beat out the Tojiro once it's thinned.

In that price range is the Dojo Nakiri: http://www.chefknivestogo.com/dojousuba165mm.html It has a carbon core, but is clad in stainless.

Are you OK with a Japanese style handle and/or carbon steel?

Arnold - If you decide on the Artifex Nakiri, you might want to check with CKTG and see if they have still have any with the linen micarta handles. The Artifex nakiri sample they sent me for the Intro to Japanese Knives videos production did have a micarta handle. IMO it looks a little nicer and it's a little bit lighter as well. The Artifex felt very nice in the hand and on the cutting board, from the small amount I played with it.

The Tojiro is a better OOTB knife, but the Artifex has more potential with it's better steel. However, if you're not into thinning a knife, get the Tojiro....it's a good knife.
